Ingredients

  • 1 store-bought sponge cake or angel food cake rectangular if possible
  • 1 cup fresh strawberries hulled and thinly sliced
  • 1 cup whipped cream or whipped topping
  • 2 tbsp strawberry jam or glaze optional for drizzle
  • Powdered sugar for garnish

Method

  1. Prepare cake base: Lay sponge cake flat on a parchment-lined surface. If needed, gently roll with a rolling pin to flatten slightly.
  2. Spread cream: Evenly spread whipped cream over the cake.
  3. Add strawberries: Arrange strawberry slices in a single layer on top of the cream.
  4. Roll it up: Starting from the long side, gently roll the cake into a log, using the parchment to help.
  5. Chill: Wrap tightly and refrigerate for 15 minutes to firm up.
  6. Slice “sushi”: Using a sharp knife, slice into 1-inch rounds to resemble sushi rolls.
  7. Serve: Drizzle with strawberry jam or glaze and sprinkle with powdered sugar before serving.

Notes

  • You can use chocolate sponge cake for a twist.
  • Substitute whipped cream with mascarpone for a richer filling.
  • Add a few mint leaves for a fresh garnish.
