Brown the Beef:

Stir in diced onion and garlic. Cook until softened and fragrant, about 2–3 minutes.
Add Cabbage and Seasonings:
Add the chopped cabbage, diced tomatoes, tomato paste, paprika, thyme, salt, and pepper. Stir well to combine.
Simmer:
Cover and cook for 10–12 minutes, stirring occasionally, until the cabbage is tender and the flavors meld together.

Sprinkle cheese over the top and let it melt for 1–2 minutes before serving.
