Ingredients
  

  • 4 large bell peppers any color, tops cut off and seeds removed
  • 1 tbsp olive oil
  • ½ cup onion finely diced
  • 2 garlic cloves minced
  • ½ lb shrimp peeled, deveined, and chopped
  • ½ lb lump crab meat fresh or canned, drained
  • 1 cup cooked rice white or brown
  • ½ cup cream cheese softened
  • ¼ cup grated Parmesan cheese
  • ¼ cup mayonnaise
  • 1 tsp Old Bay seasoning or other seafood seasoning
  • Salt and black pepper to taste
  • ½ cup shredded mozzarella or cheddar for topping
  • Lemon wedges for serving

Method
 

  1. Preheat oven: Heat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Prepare peppers: Blanch bell peppers in boiling water for 3 minutes to soften slightly. Drain and set aside.
  3. Cook filling: In a skillet, heat olive oil over medium heat. Sauté onion and garlic until softened. Add chopped shrimp and cook until pink, about 2–3 minutes.
  4. Mix stuffing: In a large bowl, combine cooked shrimp, crab meat, rice, cream cheese, Parmesan, mayonnaise, Old Bay, salt, and pepper. Stir until creamy.
  5. Stuff peppers: Spoon seafood mixture evenly into the prepared bell peppers. Place peppers upright in the baking dish.
  6. Top and bake: Sprinkle shredded cheese on top of each pepper. Bake for 20–25 minutes until peppers are tender and cheese is melted and golden.
  7. Serve: Garnish with lemon wedges and fresh herbs, if desired.

Notes

  • For a spicy kick, add a pinch of cayenne or diced jalapeño to the filling.
  • Substitute cooked quinoa for rice for a lighter option.
  • These can be prepped ahead and baked just before serving.
