Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove excess grease if needed.
Add onion and garlic, cooking until softened, about 3 minutes.
Stir in zucchini and cook until tender, about 5–6 minutes.
Add diced tomatoes, Italian seasoning, paprika, salt, and pepper. Stir to combine.
Mix in cooked brown rice and cook for another 3–4 minutes until heated through.
Sprinkle with Parmesan cheese and garnish with fresh parsley before serving.
