Ingredients
  

  • 1 lb 450 g Italian sausage (mild or spicy), casing removed
  • 2 medium zucchini diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups cooked brown rice
  • 1 cup diced tomatoes canned or fresh
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • ¼ cup shredded Parmesan cheese optional, for garnish
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove excess grease if needed.
  2. Add onion and garlic, cooking until softened, about 3 minutes.
  3. Stir in zucchini and cook until tender, about 5–6 minutes.
  4. Add diced tomatoes, Italian seasoning, paprika, salt, and pepper. Stir to combine.
  5. Mix in cooked brown rice and cook for another 3–4 minutes until heated through.
  6. Sprinkle with Parmesan cheese and garnish with fresh parsley before serving.
